We loved the herbal notes, the mouth feel is viscous and smooth, the sweetness intense, and the finish long and aromatic. There's a wonderful orangey brown colour to this honey and a thick, full bodied, sticky consistency. The big, deep, woody flavour from this honey with a smokey, dark note extracted a 'wow!' from all the judges - a smooth, rounded explosion of caramel, followed by the more gentle notes of the toffee and almost a thyme finish.
